Fried Lobster

The way that I cook or fry my lobsters is to get a huge pot that
is at least 18" deep I fill it half way with cooking oil, I use regular
vegetable oil... (not a fanatic that thinks he needs peanut oil) ...  I
then get the oil warm, add 8 cups or so of margarine slowly as to the
pot begins to get hot, when it gets to about 340-350 degrees, I add my
lobsters sliced in half down the back...... I allow the pot to get up to
around 350 on a slow recovery...when the meat of the tail gets to be
golden brown, I remove, serve with fresh homemade tortilla, beans, salsa and rice... the best meal that you ever had.... this is a traditional Mexican dish from Baja California , it is from Puerto Nuevo (New Port) this is all that some 40 restaurants there serve... delicious...
